One of the founding members of the Japan Kite Association, Shingo started the collection of kites that are now the centerpiece of the Tokyo Kite Museum. Shingo was the first Cordon Blue-trained chef in Japan and was followed by his son, Masaaki, who continues to manage the Taimeken Restaurant in the fashionable Ginza district of Tokyo. The museum still resides in the same building as the restaurant.
